Esther’s Banana Bread

1 Stick unsalted butter
1 1/3 cups dark brown sugar
3 large eggs beaten
1 tsp. vanilla extract
1 tsp. baking soda
1/4 cup sour cream
3/4 cup whole wheat flour
3/4 cup all purpose flour
1/4 tsp. salt
3 overripe mashed bananas

Pre-heat over to 350. Grease 9x5x3.5” loaf pan. Cream butter and sugar. Add eggs and vanilla and beat until the light. Stir in baking soda and sour cream. Mix together flours and salt. Add to batter and mix. Add bananas and mix well. Pour into loaf pan. Bake about one hour until a tester inserted into the middle comes out clean.
