12 hard boiled eggs, peeled & chopped
1/4 cup raisins or currants
1/2 red onion, diced
1/2 cup mango chutney
2 1/2 tablespoons curry powder (use more or less to taste)
2 tablespoons fresh minced ciliantro
3/4 cup low-fat mayonnaiseCombine all ingredients.
Chill for 3 hours before serving. Serve on toasted homestyle bread.
